I love making pies from scratch, pie dough and all, usually apple, peach or sweet potato. And I typically bake pies in batches, several at a time to be baked at a later date.I have compared the pies I make using the normal pyrex pie pans to the ones made with the Emile Henry pie pan and there is no comparison.The texture of the crust to me is superior, the browing is even, and I really like the edges which make it easy to sculpt, and the pie is evenly cooked.I can go straight from freezer to oven with no fear of shattering the pie plate.I have never had so much as a chip or a scratch on the pie pan.Sometimes, I bake the pie right away and still get excellent results.With some soaking and scrubbing with a plastic scrubber you are good to go. Also dishwasher safe.I have five of these!
